Too Simple You Say? Salmon. For Slackers.

Preheat your oven to 425 degree F. Place a salmon filet in an ovenproof dish and dot with a few tiny cubes of butter. Alternately, drizzle with olive oil. Sprinkle with salt and black pepper. Now take a lime and grate about 1 or 2 teaspoons of the zest over the fish. Squeeze some of the juice over the salmon as well - not too much. Bake uncovered for 10 minutes or to your liking.

Somewhere our simple salmon is nestled on this complicated but delicious dinner plate. With salad, yellow rice, roasted veggies, jalapeno salsa and sour cream.
