A sort of Master Lesson in utilizing leftovers. Nothing goes to waste at Cafe Drake HRV!
|We start with one lightly toasted whole wheat pita bread, warm from the oven.|
|Next we spread it lavishly with Harissa Hummus (simply hummus stirred with a tablespoon of spicy harissa paste) and top with braised radishes and carrots.|
|Some lettuces from the garden are rinsed, dried and thrown on the pita.|
|A small bit of feta is crumbled over the lettuces and a few drops of hot sauce are added.|
|Edamame Succotash and pickled red onions are the final touches before we dig in with knife and fork.|
