Open-Face Pita Sandwich (in all its eclectic Glory)

A sort of Master Lesson in utilizing leftovers. Nothing goes to waste at Cafe Drake HRV!

We start with one lightly toasted whole wheat pita bread, warm from the oven.

Next we spread it lavishly with Harissa Hummus (simply hummus stirred with a tablespoon of spicy harissa paste) and top with braised radishes and carrots.

Some lettuces from the garden are rinsed, dried and thrown on the pita.

A small bit of feta is crumbled over the lettuces and a few drops of hot sauce are added.

Edamame Succotash and pickled red onions are the final touches before we dig in with knife and fork.
