Q: What Do I Do with Leftover Hoppin' John Stew?

A: Make quesadillas, of course. At least at Cafe Drake HRV anyway, leftover stews of all sorts end up inside folded and browned tortillas, along with cheese (dairy or vegan) and cilantro and sliced onions.

Hoppin' John QuesadillasGuacamole, Stewed Collard Greens, Tofu Salad, Pickled Serrano Chilies and Pecan-Chile de Arbol Salsa. The Tofu Salad is fine as a cool side dish but even better stuffed inside a pita bread sandwich, or served with rice crackers for a healthy cocktail snack. In just 5 minutes you'll end up with an addictive new way to enjoy tofu if you follow our simple directions: After patting dry with a kitchen towel, crumble 1 block of firm or extra-firm tofu into a large mixing bowl. Add 1 sliced green onion (optional), 1/2 t. turmeric powder, 1/2 t. good curry powder, 1/2 t. ground cumin, 1/2 t. ground coriander, 4 t. nutritional yeast, 1 t. salt, some freshly ground black pepper, 1 t. lemon juice and 4 or 5 T. vegan (or regular) mayonnaise. Mix well with a fork and press to break up any larger pieces. Adjust seasoning as desired.
