Jen's Pasta Recipe
As you will read in the posting below, Jen Ruske whipped up this marvelous pasta entree for the hungry mouths of David and Julian Sellers and Cafe Drake recently, and we thought it so good and perfect for warm weather (think a crisp, grassy white wine, or full-bodied rose), the recipe was snagged and presented for your delectation.
JEN'S FRESH PASTA WITH SEAFOOD, SPRING PEAS AND MASCARPONE
In a heavy saucepan over moderate heat, fry 2 chopped shallots and 2 minced cloves of garlic till translucent. Add 1/2 cup of chicken (or veggie) broth, 8 oz. of green peas, 1/2 cup mascarpone cheese, 1/4 of a bunch of parsley (chopped), 2 T. chopped fresh chives and 2 T. thyme leaves. Add a pound of your favorite quick-cooking seafood and cook till just tender. Season with salt and add 1 lb. of cooked pasta of choice. Toss all well to mix flavors and serve hot.
