Cream of Carrot Soup a la Susan

CREAM OF CARROT SOUP
4 carrots sliced (1 cup) / 1 medium onion, sliced / 1 celery stalk with leaves sliced (i've omitted this before) / 1 1/2 cups chicken stock / 1 tsp. salt / Generous pinch of cayenne / 1/2 cup cooked rice /3/4 cup cream
Cook until soft: carrots, onion, celery and 1/2 cup of stock, around 15 mins.
Transfer to food processor and add salt, cayenne and rice.
After processing briefly, add remaining stock and cream.
Voila!
