Pasta-n-Prunes



MINI PENNE WITH CHICKEN & PRUNES

The following recipe is a variation on two recipes we heard about, one from the Food Network's Giada DL. and another from the side of a pasta box! Change some portions as you like or perhaps substitute duck breasts for the chicken.


12-15 dried prunes, diced /1 cup water /2 each chicken breasts, trimmed, cubed /6 tablespoons butter/ 1 cup red wine / ½ teaspoon nutmeg (to your tastes; Cafe Drake likes the bracing boost) / 1 box (16 ounces) Mini Penne/ ¼ cup Parmigiano cheese, grated



  1. DICE the prunes and re-hydrate in one cup of hot water for 10 minutes. Trim the chicken breast and cut into a small cubes.

  2. HEAT a medium skillet over medium-high heat and add the butter. Add chicken and prunes; sauté until the chicken is completely cooked, about 7 minutes.

  3. ADD the red wine, nutmeg, salt and pepper and reduce for about 10 minutes until the sauce has thickened.

  4. COOK the pasta according to directions. Drain and toss with the sauce.

  5. Finish with the grated cheese.
