Italian Farmhouse Green Tomato Pickles

A venerable recipe from the Old Country, specifically, the Italian region of Lombardy, can be found here on The Splendid Table's forever splendid website. We're pulling all the still-green tomatoes from the abiding plants in the Cafe Drake HRV gardens in anticipation of a hard freeze tomorrow night. Some, as above, are getting the Italian pickle treatment while others will become chutney. A few of course will be fried!
