Sprouts, Another Method
Sprouting in a trusty jar, the old fashioned way, is still best for lentils, wheat berries and all dried legumes and grains but leafier varieties actually do far better when "planted". Here's how: fill a shallow wide container with any potting soil mix to the depth of about 2 inches. Plastic trays designed for seedling growth are cheap and effective. If you're using an aluminum tray ($2 at your local supermarket) be sure to pierce the bottom with plenty of holes for drainage. Scatter vegetable seeds over the soil and then lightly cover with a thin layer of more soil. Dampen well and keep moist; you should spray with water once a day. Covering the tray with plastic wrap keeps the seeds warmer and moist. Above, Cafe Drake HRV used a mix of broccoli, fenugreek and cabbage seeds.
