CHICKEN IN GARLIC SAUCE (POLLO EN SALSA DE AJO)
Here's how to make a dish so delicious it will enter your permanent repertoire after the first preparation! OK, pour a nice glass of dry sherry and sip to taste. Now cut 2 lbs of boneless, skinless chicken thighs into thirds and toss with lots of paprika, some salt and cayenne pepper.


Heat about 2 T. of very good olive oil in a large skillet and brown for 2 minutes 6 cloves of unpeeled garlic. Remove garlic and brown chicken for 2 minutes per side. Add 1/2 cup of sherry and boil for 30 seconds. Add 1/2 cup of rich chicken stock and a bay leaf. Cover and simmer for 10 minutes on low heat.


Meanwhile mash the cooked garlic with 3 T. of chopped parsley. Add to chicken and cook for 10 more minutes. Season again with salt and serve warm.
