Soup en homage MIKI-SAN

Trying to recreate Miki's cold weather comfort soup, Cafe Drake emerged from a 10-hour work day recently to whip up a version less fabulous but spicy enough to warm our snow-coated souls. We simmered soft tofu, carrots, onions and sliced kimchee in beef broth for an hour, before pouring over rice and a chopped hard-boiled organic, free-range egg. Loads of red chile and dots of sesame oil completed a near-perfect recreation of Miki-san's Korean stew.
