Lomitos (Yucatan-Style Tiny Pork Pieces)



Cut about 1 1/2 lbs. of pork loin into 1/2" pieces. Marinate for 1 hour in the juice of 1 orange and 1 lime and the following spices: salt, black pepper, cumin seeds, oregano, allspice, cloves and cinnamon.

Heat oil in a large saucepan and saute for 10 minutes: 1 chopped tomato, 1 chopped onion, 2 cloves of minced garlic and 1-2 green chiles. Add marinated pork and any accumulated liquid. Cover with water and season with salt.

Simmer uncovered 2 hours or until meat is tender and almost no broth remains in pan.

Serve over rice or with fried plantain chips.



TOSTONES (FRIED GREEN PLANTAIN CHIPS)

Peel and chop into 1-inch pieces two very green and hard plantains.

Deep-fry in hot oil for about 3 minutes, then remove with a slotted spoon.

With a cleaver etc mash each piece almost flat.

Return to oil and fry for about 2 more minutes or until golden brown and quite crisp. Drain on paper towels and season generously with salt.
