Cafe Drake Goes Greek


Corfu Fish Stew
(Easy! Brown 1 large chopped onion and 5 halved cloves of garlic in 2 T. butter and 1 T. olive oil. Add chopped potatoes and cook for 5 more minutes. Add 1 lb. fish - we used Mahi Mahi steaks - and cover all with fish stock. Add more olive oil, plenty of salt and pepper and two bay leaves. A few dried red chiles are also welcome in the mix. Simmer on very low with no lid for 30 minutes or until liquid is reduced by half.)
