15-Minute One-Pot Meal
The indulgences of the holidays have left many of us craving simple foods, and what's easier or more basic than a bowl of steaming pasta? Adding to the satisfaction factor is a total cooking time rivaling Rachel Ray without stooping to the semi-homemade sub-standards of Sandra Lee.
Basically, put a pot of salted water on to boil. Now coarsely chop 1 large onion, 1 clove of garlic and 1/2 a large green bell pepper. Saute the veggies in a couple of tablespoons of oil and throw in some cayenne pepper for heat. After 2-3 minutes add 1/4 pound cubed soppresata and continue to cook on low until the pasta is tender (by this point you should have added 1 box of your favorite variety to the now boiling water).
Drain pasta and return to saucepan, add sauteed veggies and meat along with 2 handfuls of frozen peas. Pour on a cup or so of tomato sauce and season to taste with salt and pepper after stirring it all together. Top with grated Parmesan as desired.
