Short Order Pasta


You want quick you say. You want fast. You want dinner within 20 minutes of walking through the door. You want to spend no more than 5 minutes washing dishes. You want to look skinny at the beach the next day. The recipe below truly delivers on all fronts. If you are planning a trip to the seaside or picnic the following afternoon, bring the refrigerated leftovers along, as these flavors hold up very well overnight.



LINGUINE FINI WITH SCALLOPS



1 box (16 ounces) Linguine Fini /4 tablespoons extra virgin olive oil / 1 clove garlic / 1/2 teaspoon red pepper flakes / 1 pound bay scallops / 1 cup white wine / sea salt /fresh parsley, chopped



  1. HEAT olive oil in a large skillet over medium heat. Add garlic and red pepper and sauté.

  2. SLICE scallops thin; add to the skillet and sauté over high heat for few minutes.

  3. ADD wine and evaporate well, season with salt and pepper.

  4. COOK pasta according to directions. Drain and toss with the sauce. Sprinkle with parsley before serving.
