Short Order Pasta
You want quick you say. You want fast. You want dinner within 20 minutes of walking through the door. You want to spend no more than 5 minutes washing dishes. You want to look skinny at the beach the next day. The recipe below truly delivers on all fronts. If you are planning a trip to the seaside or picnic the following afternoon, bring the refrigerated leftovers along, as these flavors hold up very well overnight.
LINGUINE FINI WITH SCALLOPS
1 box (16 ounces) Linguine Fini /4 tablespoons extra virgin olive oil / 1 clove garlic / 1/2 teaspoon red pepper flakes / 1 pound bay scallops / 1 cup white wine / sea salt /fresh parsley, chopped
- HEAT olive oil in a large skillet over medium heat. Add garlic and red pepper and sauté.
- SLICE scallops thin; add to the skillet and sauté over high heat for few minutes.
- ADD wine and evaporate well, season with salt and pepper.
- COOK pasta according to directions. Drain and toss with the sauce. Sprinkle with parsley before serving.
