Courtesy of Thordis following her recent family visit in Reykjavik, the sweet Icelandic liqueur known as Bjork is decidedly woody in taste and makes for a bracing digestif. Named after the Icelandic word for "birch", twigs from the trees float in each bottle and infuse this after-dinner treat with northern forest flavors.
Not limited to "dip" with olive oil and bread, Dukkah is appearing on green salads daily now at Cafe Drake HRV. We also like it sprinkled liberally over broiled tomatoes and mixed with flour as a coating for fried green tomatoes (now flooding local markets and roadside stands, plucked before the impending first hard frost).
