A Nifty (and Quick) Pizza




We started with Trader Joe's whole wheat pizza dough. After rolling out and placing on your baking sheet or pizza stone, top dough with mushrooms cooked with butter and olive oil and lots of garlic. Now sprinkle all with minced red and yellow bell peppers and a green chili or two. Dot the entire surface with fresh mozzarella ( Cafe Drake used the seriously creamy Ovoline variety) and dust lightly with grated Parmesan and a few snipped chives.

Baked it all at 425 degrees for about 12 minutes or until crust was thoroughly cooked. Allow to cool for a few minutes, slice into wedges and drizzle with truffle oil. Good as above alongside braised kale and roasted broccoli.
