Cheater's Brandade



Love that bistro classic but don't have the time - or inclination - to make a white sauce? Below is Cafe Drake's quick and easy version, almost as good as when prepared traditionally and a lifesaver for a weeknight dinner for friends. Serve with a salad prior or to follow and simply good, strong coffee and chocolate for dessert.

BRANDADE
  1. Soak 1 lb. of dried salt cod overnight in the fridge. Change the soaking water at least twice.

  2. Drain and rinse cod and simmer in water for about 10 minutes. Drain and flake and set aside.
  3. Make mashed potatoes according to your favorite recipe, leaving them a bit thicker than you normally might.

  4. Add cod to mashed potatoes and mix well. Season to taste with salt and pepper.

  5. Place cod-potato mixture in a large casserole or individual gratin dishes.

  6. Drizzle with heavy cream and top all very well with grated Gruyere cheese. A sprinkle of Parmesan is also appreciated.

  7. Bake at 350 degrees, uncovered, for about 20 minutes or until cheese is melted and well browned. You may run under the broiler if a burnished top is desired.

  8. Serve very hot and LIGHTLY sprinkled with fresh grated nutmeg.
