Cheater's Brandade
Love that bistro classic but don't have the time - or inclination - to make a white sauce? Below is Cafe Drake's quick and easy version, almost as good as when prepared traditionally and a lifesaver for a weeknight dinner for friends. Serve with a salad prior or to follow and simply good, strong coffee and chocolate for dessert.
BRANDADE
- Soak 1 lb. of dried salt cod overnight in the fridge. Change the soaking water at least twice.
- Drain and rinse cod and simmer in water for about 10 minutes. Drain and flake and set aside.
- Make mashed potatoes according to your favorite recipe, leaving them a bit thicker than you normally might.
- Add cod to mashed potatoes and mix well. Season to taste with salt and pepper.
- Place cod-potato mixture in a large casserole or individual gratin dishes.
- Drizzle with heavy cream and top all very well with grated Gruyere cheese. A sprinkle of Parmesan is also appreciated.
- Bake at 350 degrees, uncovered, for about 20 minutes or until cheese is melted and well browned. You may run under the broiler if a burnished top is desired.
- Serve very hot and LIGHTLY sprinkled with fresh grated nutmeg.
