Pork Chops of Taipei

TAIWANESE PORK CHOPS
4 center cut pork chops (bone-in preferably) / 2 T. soy sauce / 1 T. sugar / 2-3 T. white wine / 1 t. Chinese 5-Spice powder / dash or two of salt and cayenne pepper

- Make a marinade from all ingredients above and place in a large ziplock bag with pork chops.
- Marinate in refrigerator at least 4-6 hours, shaking the bag now and then.
- Bring to room temperature and then remove chops from marinade.
- Dust both sides of pork with cornstarch and fry at medium-high in a lightly oiled skillet.
- Allow about 3-5 minutes per side depending on thickness of chops.
- Garnish with lots of snipped chives or chopped scallions.
