Pork Chops of Taipei

Several visitors to Cafe Drake have inquired as to what precisely designates a pork chop "Taiwanese". Find out via the recipe below - insanely simple and fast and very well-received by our guests.

TAIWANESE PORK CHOPS

4 center cut pork chops (bone-in preferably) / 2 T. soy sauce / 1 T. sugar / 2-3 T. white wine / 1 t. Chinese 5-Spice powder / dash or two of salt and cayenne pepper
  1. Make a marinade from all ingredients above and place in a large ziplock bag with pork chops.
  2. Marinate in refrigerator at least 4-6 hours, shaking the bag now and then.
  3. Bring to room temperature and then remove chops from marinade.
  4. Dust both sides of pork with cornstarch and fry at medium-high in a lightly oiled skillet.
  5. Allow about 3-5 minutes per side depending on thickness of chops.
  6. Garnish with lots of snipped chives or chopped scallions.
