Dinner en homage Samantha Eggar





Some screen personalities fail to achieve superstardom in their careers, but possess a presence so personal and intoxicating they remain in our minds long after their box office appeal has been cashed out. Resolutely British, Eggar rarely worked outside of her native country, and while a few of her films achieved success outside the U.K., like Diana Rigg for example, she remains very culturally specific; perhaps this foreign identity was the obstacle to her American breakthrough? Regardless of these (now) historical details, Sam Eggar will always be a star at Cafe Drake, and is honored below with a meal drawing from the British Isles and reflecting the actress's long-time commitment to eating no land animals (Ms. Eggar has been a great friend to the animal cause in England through public service ads and print campaigns).
LOBSTER PIE
An Elizabethan recipe, this potpie of sorts makes a nice change to the usual broiled lobster tail or boiled whole crustacean. Serve with a green salad (hand-foraged wild greens would make a nice accompaniment to a "period" meal) and follow with a course of good British cheddar and brown bread.
  1. Make or buy a simple pie crust. Thaw if frozen.
  2. Boil two lobsters, take out the tails, cut them in two, cut each tail in four pieces, and lay them in the dish.
  3. Pick out all the rest of the meat, from the claws especially.
  4. Chop it all together, season it with pepper, salt and about two or three teaspoonfuls of vinegar. Melt half a pound of butter, stir all together and lay it over the tails.
  5. Put on your pastry cover, and bake in a slow oven according to pie crust instructions.
