The Tofu Salad is fine as a cool side dish but even better stuffed inside a pita bread sandwich, or served with rice crackers for a healthy cocktail snack. In just 5 minutes you'll end up with an addictive new way to enjoy tofu if you follow our simple directions: After patting dry with a kitchen towel, crumble 1 block of firm or extra-firm tofu into a large mixing bowl. Add 1 sliced green onion (optional), 1/2 t. turmeric powder, 1/2 t. good curry powder, 1/2 t. ground cumin, 1/2 t. ground coriander, 4 t. nutritional yeast, 1 t. salt, some freshly ground black pepper, 1 t. lemon juice and 4 or 5 T. vegan (or regular) mayonnaise. Mix well with a fork and press to break up any larger pieces. Adjust seasoning as desired. |
