Smoked Almonds You Can Make at Home!

Cafe Drake has plowed through many a small can of smoked almonds - we crave them with slightly sweet whiskey cocktails like Old Fashioneds and Manhattans. Problem is they're getting harder and harder to find and a quick label glance reveals some dubious chemical ingredients. Now you can make them at home, thanks to our experiments, and the Cafe Drake version has no added fat. That's right, we're talking dry roasting via a simple, flawless method.

Begin by preheating your oven to 350 degrees. Place 2 cups raw almonds on a baking sheet, all in a single layer. Toss with: 2 T. soy sauce or tamari, 1 T. smoked paprika, 1-2 T. liquid smoke (don't use more, trust us) and 1/2 t. or more of cayenne pepper. Roast for 5 minutes in the oven then remove pan, stir well and return to oven for 5 more minutes. Repeat this once more and then turn off oven, leaving almonds inside for 5 more minutes. Allow to cool completely and Voila! The baking sheet will look slaughtered but actually cleans very easily.
