FETA AND TOMATO BREAD PUDDING

1 small whole wheat baguette / 1/2 red onion, sliced / 2 cups feta cheese, crumbled / 3 eggs / 2 cups whole milk / salt and cayenne pepper and dried or fresh thyme / 3/4 cup oil-packed sundried tomatoes, chopped coarsely

  1. Butter a fairly deep casserole dish and preheat oven to 350 degrees.
  2. Beat eggs in a mixing bowl, then whisk in milk, salt, cayenne and thyme leaves.
  3. Cube bread and place in bottom of casserole. Add tomatoes,onion and feta and toss well.
  4. Pour egg/milk mixture over all and set aside for 30 minutes.
  5. Bake for 45 to 50 minutes or until golden and puffy.
